      • 2 cups pitted dates, finely chopped
      • 1 cup milk
      • 6 tbls. butter
      • ¼ cup molasses
      • 1-2/3 cups flour
      • 2/3 cup yellow cornmeal
      • 1 tsp. baking powder
      • ½ tsp. baking soda
      • ½ tsp. salt
      • ½ tsp. cinnamon
      • 1 egg, room temp.
      • 2/3 cup sugar
      • ½ tsp.vanilla
      • 1 cup chopped pecans, toasted
      • Butter and flour to coat baking pan

    How to make it

    • Preheat oven to 325
    • Over medium heat, mix dates, milk, butter and molasses into saucepan, stirring until butter melts and mixture begins to simmer
    • Remove from heat and allow to cool
    • Butter and flour 9x5 inch loaf pan
    • In mixing bowl, add flour, cornmeal, baking powder, baking soda, salt and cinnamon and mix to blend
    • In another mixing bowl, add egg, sugar, and vanilla and mix to combine
    • Add to date mixture and stir until blended
    • Add pecans and flour mixture to date mixture and stir until combined
    • Pour into loaf pan
    • Bake 1 hour-10 minutes or until toothpick inserted into center comes out clean
    • Cool on baking rack
